It's that time of year again. Over-priced flowers, chocolates galore and lots of red and pink, everywhere! Don't you just LOVE Valentines day? I've been making cards with my kids and will be cooking up some healthy treats on the 14th. Hubby and I usually opt for an evening in and a romantic movie - pretty low key. We would usually go for some salmon and greens and then perhaps some gluten-free apple crumble for dessert. Yum!

These little treats are perfect for the day of Love!  They're all natural and refined sugar-free. Dessert truffles are a lovely way to enjoy raw food. These cacao date truffles are simple to make and are very tasty. I just adore cacao. It has a rich and chocolatey flavour and is packed with antioxidants. Just don't have too much in one go, it'll give you an unmistakable buzz! You can omit the extra dusting of the cacao powder if you're not keen on the bitter flavour.

The almond butter adds a creamy and smooth texture. It's also great for you and is high in essential fatty acids and protein. It also contains a whole host of other nutrients such as calcium, zinc, iron, folate, phosphorous and magnesium. The high iron content promotes healthy oxygen transport within your blood cells, while the magnesium contributes to the proper functioning of our nervous system. It’s also super tasty just on it’s own. You’ll often find me digging into a jar of almond butter. Amazing stuff!

The dates are also an amazing source of unrefined sugar. They taste incredible in these truffles.

The truffles can be kept in a sealed container in the fridge for up to a week, although they won’t last that long  as the whole family will be eating these delicious treats.

Ingredients

  • 10 medjool dates
  • 5 Tbsp (heaped) almond butter
  • 3 Tbsp raw cacao powder
  • 1 tsp vanilla extract
  • extra cacao for dusting

Create

Place dates, almond butter, cacao powder and vanilla extract into food processor and blend until smooth.

Divide the mixture into 15 equal portions and roll into balls.

Place extra cacao powder into a dish and roll the balls into the cacao until just covered. Brush off any excess cacao powder to prevent it tasting too bitter.

Place in bon bon cases and serve.
