My husband and I celebrated our 10th wedding anniversary a few weeks ago. It's been a decade of ups and downs, two children and a lot of craziness but we're still together! We decided to mark this milestone by having a second honeymoon on the island of Malta. Instead of being excited about it, I was actually really stressed and tense! I had never left the kids for so long and even though I knew they would be fine with their amazing Granny, there were so many concerns that kept niggling at the back of my mind. Well, I needn't have wasted time worrying because they were absolutely fine and we had the most heavenly time. It was just so nice to have a break from being Mom, cook, cleaner, entertainer and taxi for five whole days! We lazed around the pool, swam in the turquoise sea and slept! We also did a few more active things like para-kiting and mountain biking. Awesome!
Foodwise, it was a bit tricky at times. Luckily they had a great beach cafe, 'Pebbles', that offered fresh fruit smoothies. Pebbles was my saving grace for sure! I had a smoothie every morning for breakfast and for my mid afternoon snack - instead of ice-cream. They even let me mix in my own nuts so that I could make the breakfast smoothie more substantial. Such friendly people!
I could usually find a salad and some gluten-free bread for lunch. The Maltese are very concerned with diet and food allergies so are exceptional with their gluten-free products. For dinner, I enjoyed fish, vegetables and salads. I also brought a load of my own snacks with me so I was very well fed and managed to stick to my MS diet. Success!
Being out of my normal routine inspired me to do a little recipe experimentation. So, I've making some beautiful dishes which I'll be posting the recipes for soon. The star of a few of these recipes is this Nutty Vegan Cheese. It has the appearance and texture of humous but tastes quite cheesy and nutty. It can be used in lasagnas, gluten-free pizzas and as a side for salads and roasted veggies. I'm seriously addicted and it's super easy. It can be whipped up in just a few minutes.
It contains cashew and brazil nuts which are both known for their good fat content and high protein levels. It also contains nutritional yeast which is not the same as the usual yeast that makes bread rise. Nutritional yeast is a deactivated form of yeast that looks like little yellow flakes. It is a good source of the B-complex vitamins and is often fortified with Vitamin B12. It's completely MS diet legal!
Nutty Vegan Cheese
Ready in: 10min
1/2 cup brazil nuts
1/2 cup cashew nuts
1 sprig fresh rosemary
2 Tbsp nutritional yeast
3 Tbsp extra-virgin olive oil
1/4 cup water or more
Put the nuts into the food processor with the lemon juice and blend until the nuts are completely ground up.
Add the rest of the ingredients to the mix and blend on high speed until a creamy mixture begins to form. You may need to add a little more water if the cheese is too stiff and lumpy. Keep blending and adding tiny bits of water until you are left with a fairly smooth mixture.
Use as a cheese substitute for pasta, pizza or as a delicious dip for vegetables.
